Meat Rogan Josh
- 1 lb boned meat (lamb or steak)
- 4 tablespoons corn oil
- 1 medium onion - chopped
- 1/2 teaspoon ginger paste
- 1/2 teaspoon garlic paste
- 3 cardamoms
- 3 cloves
- 1 bayleaf
- 1 cinnamon stick
- 1 teaspoon paprika powder
- 1 teaspoon chilli masala
- 1/4 pint natural yoghurt
- 1 tablespoon poppy seeds
- 1 oz chopped almonds
- pinch of saffron
- 1/4 teaspoon garam masala
- 12 fl. oz. water
- salt to taste
- Heat oil in pan and fry onion until golden brown and slightly crisp.
- Add cardamoms, cloves, bayleaf and cinnamon.
- Add ginger and garlic, then immediately add meat.
- Seal meat, then add chilli masala, paprika and saffron - mix for
approx. 2 minutes.
- Add beaten yoghurt, 1 tablespoon at a time, mixing continuously.
- Cook for 5-8 minutes, until the oil rises.
- Crush poppy seeds a little, then add together with almonds - cook for
a further 2 minutes.
- Add salt and approx 1 1/2 cups water and simmer for approx 40 minutes
until meat is tender.
- Add garam masala and serve.
