Meat Rogan Josh

1 lb boned meat (lamb or steak)
4 tablespoons corn oil
1 medium onion - chopped
1/2 teaspoon ginger paste
1/2 teaspoon garlic paste
3 cardamoms
3 cloves
1 bayleaf
1 cinnamon stick
1 teaspoon paprika powder
1 teaspoon chilli masala
1/4 pint natural yoghurt
1 tablespoon poppy seeds
1 oz chopped almonds
pinch of saffron
1/4 teaspoon garam masala
12 fl. oz. water
salt to taste
  1. Heat oil in pan and fry onion until golden brown and slightly crisp.
  2. Add cardamoms, cloves, bayleaf and cinnamon.
  3. Add ginger and garlic, then immediately add meat.
  4. Seal meat, then add chilli masala, paprika and saffron - mix for approx. 2 minutes.
  5. Add beaten yoghurt, 1 tablespoon at a time, mixing continuously.
  6. Cook for 5-8 minutes, until the oil rises.
  7. Crush poppy seeds a little, then add together with almonds - cook for a further 2 minutes.
  8. Add salt and approx 1 1/2 cups water and simmer for approx 40 minutes until meat is tender.
  9. Add garam masala and serve.
