Braised Bhindi (Okra or Ladies fingers)

8 oz okra - cut into 1/4" lengths
1 small onion - finely chopped
1/2 teaspoon chilli masala
1/2 teaspoon turmeric powder
3 tablespoons corn oil
salt to taste
  1. Heat oil in frying pan, then add onions and cook until crisp and golden.
  2. Add chilli masala and turmeric, then okra, stir frying for 8-10 minutes. Okra should be slightly crunchy (NOT gluey).
  3. Add salt to taste and serve immediately.
